24.1 Black Bean and Corn salsa
This is a mild salsa, though you can probably add some peppers or chile.

Ingredients:

1can black beans | Bowl |
1 can corn | Can opener |
Red/Green pepper | Spoon |
Feta cheese | Knife |
Cilantro (optional) | Cutting board |
Onion (optional) |
Preparation:
- Drain the beans and corn (you may want to rinse the beans), and empty them into a bowl.
- Dice up the peppers. I like to try to get the chunks are approximately the same size as the beans and corn. Add them to the bowl.
- Do the same to the feta cheese, if you want that. Add it to the bowl.
- Mix it all up.
Variations:
- Add onion to it. I would start with 1/4 - 1/2 an onion, again diced to about the same size.
- If you want some heat, dicing up some jalapeno peppers or green chile would probably go well.
Notes:
- It’s been a while since I’ve made this, so I don’t remember how much cilantro I used. I think about 1/4 cup, loosely filled, and then minced up.
