This is a tomato-based BBQ sauce that may be more familiar. I think it’s in the Kansas City style.
Source: Based on “Sweet and Mild Barbecue Sauce” from Paul Kirk’s Championship Barbecue book. But I made some changes along the way.
Ingredients:

2 1/2 cups ketchup | 1/2 tsp paprika |
3/8 cup brown sugar | 1/2 tsp chipotle chile powder |
1 cup apple cider vinegar | 1 tsp garlic powder |
1/2 cup Worcestershire sauce | Tools: |
1/4 cup olive oil | Saucepan |
1 - 1 1/2 tsp salt | Spoon or whisk |
1 tsp black pepper | Jars |
1/2 tsp red pepper flakes |
Preparation:
- Put the ingredients into the saucepan on low/medium heat.
- Mix it up and bring to a simmer.
- Remove from heat and allow to cool.
Variations:
- I’ve only made this once, still working on variations.
Notes:
- I may tinker with this recipe. Perhaps less ketchup and some other thickener. Probably more Worcestershire sauce. The goal would be to get a consistency that is neither watery like the vinegar sauce, but not a paste like Sweet Baby Ray’s, while also making it a bit less basic tomato/ketchup-tasting. Maybe some Gaur Gum would help thicken with less ketchup? Or more Worchestershire sauce, or add some vinegar?
