23 Salad Dressing

I generally prefer vinaigrette style dressings, so that’s probably all I’ll put on here. The basic ratio is 3 parts oil, 2 parts vinegar. Though come to think of it, I think I usually have about another 1/8 cup of vinegar. But I don’t mind my dressing a little more thin. If you don’t want as thin a dressing, you might reduce the relative amount of vinegar, maybe something like 30% vinegar instead of 40%.

These recipes all call for a blender to create an emulsion. I use a smoothie blender (used to use a NutriBullet, now a smaller container of a Vitamix).
