23.1 Green chile vinaigrette
Inspired by the fact that I was out of chipotle peppers in adobo sauce for the southwest dressing, but still wanted a southwestern type dressing. Green chile powder is a staple of New Mexico.

Ingredients:

1 1/4 cup olive oil | 1/2 tsp black pepper (optional) |
1/2 cup apple cider vinegar | 1/2 tsp garlic power (optional) |
1/4 cup red wine vinegar | |
3 tsp green chile powder | Tools |
1.5 - 2 tsp honey | Blender |
1/2 tsp salt | Dressing container |
1/2 tsp oregano |
Preparation:
- Measure the oil and vinegar into the blender.
- Add the dry spices and the honey.
- Blend it up to immerse. I tend to use several short pulses, rather than one cycle. It probably doesn’t matter.
- Pour it into your dressing container, and it’s ready to use.
Variations:
- I think that the black pepper and garlic are good additions, but shouldn’t overpower the green chile powder.
- Many similar recipes include some lime juice.
Notes:
- I don’t keep this dressing in the fridge.
